Chhattisgarh
The state is known as the rice coliseum of India. Filled with traditional foods that are majorly made of rice and rice flour, yogurt and a variety of green vegetables like lal bhaji, Muthia , Aamat which is very prevalent in Bastar region, cholai , kanda bhaji, kheksi, kathal, kochai patta, kohda and bohar bhaji etc. Some well known breakfast dishes made out of rice & rice flour include fara/ muthiya, cheela( dosa like dish made with rice batter). People of Chhattisgarh don't waste food. People eat Baasi since a very long time. The rice which is left over from previous days is dipped in water and curd and eaten with different types of chutney.
- Muthia- These are a type of dumplings cooked in the traditional style of the Chattisgarh. Muthia is prepared with the rice batter which is seasoned with variety of spices. The dish is boiled rather than of frying and hence it retains the original flavor of its constituents. Muthia is a famed dish of the state which is commonly enjoyed in the breakfast.
- Aamat- This finger whipping delicacy of the state is prepared with mixed vegetables which is cooked on with the ginger garlic paste and varied spices to boost the flavor of the dish. Bamboo shoots are used to prepare this tasty dish. The bamboo keeps the flavor of the constituents in complete and also adds the unique aroma to the dish. This procedure of cooking Aamat is still very much common in the remote areas of Bastar. Although, the dish is prepared with the modernistic equipment's and utensils in the metropolitan areas. This is a specialty of Chhattisgarh.
- Chila- Chila is a dosa like dish which is prepared with the rice batter mixed with the Urad Daal. The dish is actually easy to cook and is really scrumptious in the taste. Chila is an important part of the breakfast menu of the people of Chhattisgarh. To snap the full taste of Chila, complement it with the green chutney.
- Faraa - Faraa are made in the form of dumpling, the main component of dish being rice. The dough of rice along with the minimal spices are seasoning of coriander leaves is put to smoke to get the light and healthy snack that hails from Chhattisgarh.
- Tilgur - Tilgur of Til ke Ladoo is a well-known dish that has got it origin from Chhattisgarh state. Jaggery and peanuts are taken and then the sesame seeds are added to it. It's well mixed and is also made into Ladoos to bag the widely known dish of the state. Tilgur are must- served during the varied occasions and carnivals of the state. Makar Sankranti is the main festivity where the people prepare Tilgur.
- Khurma - What's famously known as Sewaiya, a well-known dish which is served on Id is a dish which is also famed in Chhattisgarh. Khurma is prepared with the two main ingredients as milk and vermicelli. The roasted vermicelli are added to the piping hot water along with sugar syrup and rich dry fruits to get an absolutely lip- smacking sweet dish which will surely satisfy your sweet tooth.
- Bafauri - Bafuari is a healthy take against "unhealthy" pakodas which are every Indian’s favorite snack. Bafauri is cooked in besan with varied vegetables and spices add the mouth- savoring taste to the dish. The fact that isn't cooked in oil makes it extremely healthy to eat.
- Dubki Kadi - Dubki Kadi is a pulse- alike dish which is basically cooked with the curd. The pakodas of gram flour are added to the dish which is mainly put together with the sour curry of curd and spices. Other than from Dubki Kadi, there are other variants of the dish like as Arbi kadi, Bhindi kadi etc which are also mouth- watering.
- Moong dal halwa - Dals not only make menus but also you can prepare tasteful sweet dishes like Moong Dal Halwa. This dish is prepared with Moong Dal, sugar, and ghee. Finely diced dry fruits and cardamom grinded into powder form make this dish more toothsome.
- Kusli - This tasty Kusli is prepared with white flour, sooji, and ghee. Dry fruits are also a part of this sweet dish component, which makes it savory to taste.
